These cookies not only look delightful, resembling cute black cats with expressive eyes, but they also taste amazing with a soft, buttery texture that melts in your mouth. Making themed cookies is a great way to engage with friends and family during the spooky season.
Ingredients
Scale:
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
1 large egg
2 teaspoons vanilla extract
1 teaspoon almond extract (optional)
Black icing for cookies (store-bought or homemade)
Colorful sprinkles or edible glitter for decoration (optional)
Instructions
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer until fluffy.
Add the egg, vanilla extract, and almond extract (if using) into the butter mixture and beat until well combined.
Gradually add the dry ingredients to the wet mixture, mixing on low speed until the dough comes together.
Chill the dough in the refrigerator for at least 30 minutes.
Once chilled, roll the dough out on a lightly floured surface to about 1/4 inch thickness.
Use a cat-shaped cookie cutter to cut out the cookies and place them on the prepared baking sheets.
Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden.
Let the cookies cool on the sheets for 5 minutes before transferring them to a wire rack.
Once cooled, decorate the cookies with black icing and allow the icing to set before serving.
