2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon (optional)
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
3 ripe bananas, mashed
1 teaspoon vanilla extract
1 cup fresh blueberries
1/4 cup granulated sugar (for topping)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
In a medium-sized bowl, whisk together the flour, baking soda, salt, and cinnamon.
In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
Beat in the eggs, one at a time, then add the mashed bananas and vanilla extract, stirring until smooth.
Gradually add the dry ingredient mixture to the banana mixture, stirring gently until just combined.
Gently fold in the blueberries.
Pour the batter into the prepared loaf pan and smooth the top.
Sprinkle the 1/4 cup of granulated sugar evenly over the top of the batter.
Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
