Butter Swim Biscuits are a delightful blend of simplicity and comfort, perfectly embodying the essence of Southern baking. These biscuits are unique because they swim in a pool of melted butter, creating a rich, flaky texture that is hard to resist.
Ingredients
Scale:
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/4 cup granulated sugar
1 cup buttermilk, room temperature
1/2 cup unsalted butter, melted
1/2 cup unsalted butter (for honey whipped brown butter)
2 tablespoons honey
Pinch of salt (for honey whipped brown butter)
1/2 cup unsalted butter, softened (for cowboy butter)
1 tablespoon Dijon mustard
1 tablespoon minced garlic
1 tablespoon fresh parsley, chopped
1 teaspoon lemon juice
Salt and pepper to taste
Instructions
Preheat your oven to 450°F (230°C).
In a large bowl, combine the flour, baking powder, salt, and sugar. Whisk until evenly distributed.
In a separate bowl, whisk together the buttermilk and melted butter until well combined.
Pour the buttermilk mixture into the flour mixture. Stir gently until just combined.
In a 9x13-inch baking dish, pour in 1/2 cup of melted butter, swirling to coat the bottom evenly.
Drop spoonfuls of the biscuit dough into the buttery dish, leaving space between each biscuit.
Place the dish in the preheated oven and bake for 15-20 minutes or until the tops are golden brown.
In a small saucepan, melt 1/2 cup of butter over medium heat until it turns golden brown. Mix in honey and salt, and whip until fluffy.
In a bowl, mix softened butter with Dijon mustard, minced garlic, parsley, lemon juice, salt, and pepper until well combined.
Serve the biscuits warm with either the honey whipped brown butter or the cowboy butter.
