A fun, interactive, and flavorful way to enjoy a hearty meal outdoors, these foil packets are easy to customize and offer minimal cleanup.
Ingredients
Scale:
1 pound ground beef (or ground turkey for a leaner option)
4 medium potatoes, thinly sliced
2 cups mixed vegetables (like bell peppers, carrots, and green beans)
1 medium onion, chopped
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
Shredded cheese (optional)
Chopped fresh herbs (optional)
Hot sauce or BBQ sauce for serving (optional)
Instructions
Prepare the foil packets: Tear off large sheets of aluminum foil, about 12 inches long. You’ll need enough to create a secure pocket for each meal.
Mix the ingredients: In a large bowl, combine ground beef, sliced potatoes, mixed vegetables, chopped onion, olive oil, garlic powder, onion powder, salt, and pepper. Stir until well mixed.
Assemble the packets: Spoon a portion of the mixture onto the center of each piece of foil, creating a mound.
Seal the packets: Fold the sides of the foil over the mixture, then fold the ends to seal tightly, creating a secure packet.
Cook over the campfire: Place the foil packets on hot coals or grill grates. Cook for about 20-30 minutes, turning occasionally.
Add toppings: Carefully open the packets and sprinkle cheese on top if desired. Close the packet again for a minute to let the cheese melt.
