Instructions
Prepare the Pizza Dough: In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
In a large bowl, mix flour and salt. Create a well in the center and add the yeast mixture and olive oil. Stir until a dough forms.
Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place it in an oiled bowl, cover, and let it rise for 1 hour.
Make the Garlic Scape Pesto: Combine garlic scapes, Parmesan cheese, nuts, olive oil, lemon juice, salt, and pepper in a food processor. Blend until smooth.
Preheat the Oven: Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.
Shape the Pizza: Once the dough has risen, punch it down and roll it out on a floured surface.
Assemble the Pizza: Spread garlic scape pesto over the dough, top with shredded chicken and mozzarella cheese.
Bake the Pizza: Transfer the pizza onto the stone and bake for 12-15 minutes, until the crust is golden brown.
Garnish and Serve: Top with fresh basil leaves, slice, and serve hot.
