1 ½ cups (300g) granulated sugar
1 cup (220g) packed brown sugar
4 large eggs, preferably at room temperature
1 tablespoon vanilla extract
1 cup (130g) all-purpose flour, sifted
1 cup (85g) unsweetened cocoa powder
1 teaspoon baking powder
½ teaspoon salt
1 cup (170g) semi-sweet chocolate chips
1 tablespoon butter (for filling)
1 cup (120g) chocolate frosting
¼ cup (40g) rainbow sprinkles
Instructions
Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan thoroughly.
In a large mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until fully combined.
Add the eggs one at a time, mixing well after each addition and stir in the vanilla extract.
In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
In a small saucepan over low heat, melt the chocolate chips and butter together until smooth.
Pour half of the brownie batter into the prepared baking pan, spreading it evenly.
Drizzle the melted chocolate mixture over the batter, then pour the remaining brownie batter on top.
Bake in the preheated oven for 25-30 minutes, or until a toothpick comes out with a few moist crumbs.
Allow the brownies to cool in the pan for about 10 minutes before transferring them to a wire rack.
Once cooled, spread the chocolate frosting evenly over the top and sprinkle with rainbow sprinkles.
