A quick and delicious dinner idea that combines the ease of air frying with the flaky, tender texture of cod fillets.
Ingredients

4 cod fillets (approximately 6 ounces each, fresh or thawed from frozen)
1 cup breadcrumbs (preferably panko)
1/2 cup all-purpose flour (or a gluten-free alternative)
2 large eggs (beaten)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Salt and pepper to taste
1 teaspoon dried oregano
1 teaspoon dried parsley
Zest of 1 lemon
Juice of 1 lemon (for serving)
Instructions
Pat the cod fillets dry with paper towels to remove excess moisture.
In three shallow bowls, place the flour in the first bowl, the beaten eggs in the second, and the breadcrumb mixture in the third.
Dredge each cod fillet in flour, shake off excess, dip in beaten eggs, then coat with the breadcrumb mixture.
Preheat your air fryer to 400°F (200°C) for about 3-5 minutes.
Lightly spray the air fryer basket with cooking spray, place the breaded cod fillets in a single layer, and air fry for 10-12 minutes, flipping halfway.
Carefully remove the fillets from the air fryer and serve with lemon juice drizzled on top.
