- 2 large eggs
- 1 cup granulated sugar
- ½ cup unsalted butter, melted and cooled
- 1 teaspoon pure vanilla extract
- 2 to 3 medium apples (e.g., Granny Smith or Honeycrisp), peeled, cored, and sliced thinly
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In a large mixing bowl, beat the eggs with the sugar until pale and creamy, about 3-4 minutes.
- Stir in the melted butter and vanilla extract until combined.
- Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
- Add the sliced apples to the batter and gently fold them in.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 45 to 50 minutes, or until golden brown and a toothpick inserted comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack.
