  1. Start by preparing your ingredients. Rinse the shrimp under cold water and set them aside, making sure to remove any shells or veins that might remain. Pat them dry with a paper towel to ensure they sear well.
  2. In your Instant Pot, place the baby potatoes and corn. Add the water, shrimp boil seasoning, Old Bay seasoning, garlic powder, and black pepper. Stir everything together to ensure even seasoning distribution.
  3. Seal the Instant Pot lid tightly and set it to high pressure for 5 minutes. Make sure the steam vent is closed.
  4. When the cooking time is up, perform a quick release of the pressure by carefully turning the valve away from you to release steam.
  5. Once the pressure is released, open the lid and add the sliced sausage and shrimp. Stir gently to combine.
  6. Close the lid again and cook on high pressure for another 2 minutes.
  7. After the cooking time, quickly release the pressure again. Open the lid and check that the shrimp are pink and cooked through.
  8. Stir in the lemon juice for a fresh burst of flavor.
  9. Serve hot, garnished with fresh parsley.
