1 pound ground beef, preferably lean
1 small onion, diced finely
1 packet taco seasoning (about 1 ounce)
1 can (15 ounces) black beans, rinsed and drained
1 can (10 ounces) diced tomatoes with green chilies
1 cup sour cream (or Greek yogurt)
2 cups shredded cheddar cheese
4 cups Doritos, crushed (regular or nacho cheese flavor)
1 cup shredded lettuce
1 cup diced tomatoes
Sliced jalapeños (optional)
Chopped cilantro (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, brown the ground beef with the diced onion until the meat is no longer pink, about 5-7 minutes.
Add the taco seasoning to the beef mixture, along with the black beans and diced tomatoes. Stir until well combined and cook for another 3-4 minutes.
In a large bowl, mix the sour cream and 1 cup of the shredded cheddar cheese until smooth. Add the beef mixture to this bowl and stir until everything is well combined.
In a greased 9x13 inch baking dish, spread half of the crushed Doritos evenly across the bottom.
Pour the beef and cheese mixture over the Doritos, spreading it out evenly.
Add the remaining crushed Doritos on top of the beef mixture, followed by the remaining cup of shredded cheddar cheese.
Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and slightly golden brown.
