1 pound ground lamb
1/2 cup breadcrumbs (preferably whole wheat)
1/4 cup grated Parmesan cheese
1/4 cup finely chopped onion
2 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1 tablespoon fresh mint, chopped
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1 cup Greek yogurt
2 tablespoons lemon juice
1 tablespoon fresh dill, chopped
1 clove garlic, minced (for sauce)
Salt and pepper to taste (for sauce)
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, combine the ground lamb, breadcrumbs, grated Parmesan, chopped onion, minced garlic, parsley, mint, oregano, salt, and pepper. Mix thoroughly until well combined.
Use your hands to form the mixture into golf ball-sized meatballs, roughly 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.
Bake the meatballs for 20-25 minutes, or until cooked through and golden brown on the outside.
While the meatballs are baking, whisk together the Greek yogurt, lemon juice, dill, and minced garlic in a small bowl. Season with salt and pepper to taste.
