Ingredients
Scale:
2 tablespoons chili seasoning
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon black pepper
1/2 teaspoon salt
1 can (15 ounces) diced tomatoes
1 can (15 ounces) kidney beans, drained and rinsed
1 cup beef or vegetable broth
1 pound ground beef (or substitute with lentils for vegetarian chili)
1 medium onion, chopped
2 cloves garlic, minced
1 bell pepper, chopped
Sour cream (optional)
Shredded cheese (optional)
Chopped green onions (optional)
Slices of jalapeño (optional)
Instructions
In a large pot over medium heat, add a splash of oil. Once hot, sauté the chopped onion and bell pepper for about 5 minutes until they start to soften.
Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
Add the ground beef to the pot, breaking it apart with a spatula. Cook until browned, approximately 5-7 minutes. Drain excess fat if necessary.
Sprinkle in the chili seasoning, cumin, paprika, black pepper, and salt. Stir well to coat the meat and vegetables.
Pour in the diced tomatoes with their juices and the kidney beans. Mix thoroughly to combine all the ingredients.
Pour in the broth, bring the mixture to a boil, and then reduce to a simmer. Cover and let it cook for at least 30 minutes.
Taste and adjust the seasoning by adding more salt or chili powder based on your preference.
