Easy Lamb Curry

  1. In a large pot or Dutch oven, heat the cooking oil over medium heat. Add the cumin seeds and sauté for about 30 seconds until fragrant.
  2. Add the chopped onions and cook until they turn golden brown, approximately 5-7 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until aromatic.
  4. Add the pureed tomatoes and cook for about 5 minutes, stirring occasionally.
  5. Now add the lamb pieces to the pot, stirring to coat them in the onion and tomato mixture and cook for about 5-10 minutes until browned.
  6. Sprinkle in the coriander powder, turmeric, garam masala, red chili powder, and salt. Mix well.
  7. Pour in the coconut milk and chicken broth, bring to a gentle boil, then reduce the heat to low, cover and let simmer for 1.5 to 2 hours.
  8. Check the lamb for tenderness, and if needed, cook for another 15-30 minutes.
  9. Once ready, remove from heat and let it rest for a few minutes. Garnish with fresh cilantro and serve with lemon wedges.
