1 pound Italian sausage (sweet or spicy)
2 medium bell peppers (any color, sliced)
1 medium onion (sliced)
3 cloves garlic (minced)
1 teaspoon Italian seasoning
1 teaspoon red pepper flakes (optional)
Salt and pepper (to taste)
2 tablespoons olive oil (extra virgin)
Fresh parsley (chopped, for garnish, optional)
Grated Parmesan cheese (optional)
Instructions
Prepare the Ingredients: Slice the bell peppers and onion, and mince the garlic. Set them aside.
Cook the Sausage: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the Italian sausage, breaking it into smaller pieces. Cook for about 5-7 minutes, or until browned and cooked through.
Add the Vegetables: Once the sausage is cooked, add the sliced bell peppers and onion to the skillet. Cook for an additional 5 minutes until the vegetables start to soften.
Incorporate Garlic and Seasonings: Stir in the minced garlic, Italian seasoning, red pepper flakes, salt, and pepper. Cook for another 2-3 minutes.
Serve: Remove the skillet from heat. If using, sprinkle with chopped parsley and grated Parmesan cheese before serving.
