2 packs of instant ramen noodles (discard the seasoning packet)
1 boiled egg (soft or hard)
1 cup of fresh spinach or bok choy
1/2 cup of sliced green onions
1/4 cup of corn kernels
1 tablespoon chili oil for drizzling
Sesame seeds for garnish
Instructions
In a large pot, combine the chicken or vegetable broth, soy sauce, miso paste, chili paste, sesame oil, ginger, and minced garlic. Bring this mixture to a simmer over medium heat for about 10 minutes.
While the broth is simmering, prepare the instant ramen noodles according to the package instructions, usually boiling them for about 3-4 minutes until al dente. Drain and set aside.
