Instructions

  1. In a large mixing bowl, whisk together the dry ingredients: flour, baking soda, ground ginger, ground cinnamon, ground cloves, and salt until well combined.
  2. In another bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the molasses, egg, and vanilla extract to the butter mixture, mixing until fully incorporated.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low speed until a soft dough forms.
  5. Divide the dough into two portions, shape them into discs, wrap in plastic wrap, and refrigerate for at least 2 hours or overnight.
  6. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Once the dough is chilled, roll it out on a lightly floured surface to about 1/4 inch thickness.
  8. Use cookie cutters to cut out your desired shapes and place them on the prepared baking sheets.
  9. Bake for 8-10 minutes, or until the edges are firm and the centers are slightly soft.
  10. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack.
  11. Once cooled, decorate with royal icing and your choice of sprinkles and candies.
