1 cup cooked quinoa
1 cup cherry tomatoes, halved
1 cucumber, diced
1 avocado, sliced
1 cup mixed greens or spinach

1/2 cup Greek yogurt or low-fat sour cream
2 tablespoons ketchup
1 tablespoon Dijon mustard
1 teaspoon smoked paprika

Instructions
In a large skillet over medium heat, cook your ground turkey or chicken. Season with salt, pepper, and any other preferred seasonings, such as garlic powder or Italian herbs for added complexity. Cook until browned and fully cooked through, about 7-10 minutes.
