1 1/4 cups vegetable broth (or water)
1/2 teaspoon sea salt
2 tablespoons olive oil
Juice and zest of 1 large lemon
1 cup diced cucumber
1 cup halved cherry tomatoes

Instructions
In a medium saucepan, bring the vegetable broth (or water) and sea salt to a boil over medium-high heat.
Once boiling, stir in the couscous, cover the saucepan, and remove it from heat. Let it sit for about 5 minutes.
