Ingredients
Scale:
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup granulated sugar
1/2 cup unsalted butter, melted
1 cup fresh orange juice
1/4 cup champagne or sparkling wine
2 large eggs
1 tablespoon orange zest
Instructions
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly with non-stick spray.
In a large bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
In another bowl, mix the melted butter, orange juice, champagne, eggs, and orange zest until fully combined.
Pour the wet ingredients into the dry ingredients and gently fold together using a spatula.
Using a cookie scoop or spoon, fill each muffin cup about two-thirds full with the batter.
Bake in the preheated oven for 18-20 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
