1 pound boneless chicken thighs, cut into bite-sized pieces
In a mixing bowl, combine the chicken pieces with soy sauce, rice vinegar, cornstarch, salt, and 1 teaspoon of black pepper. Mix well to coat the chicken evenly and allow it to marinate for at least 30 minutes.
In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.
Sauté the minced garlic and ginger for about 30 seconds until fragrant.
Add the marinated chicken to the skillet in a single layer. Cook for about 5-7 minutes, without stirring, until the chicken is browned on one side. Stir and continue cooking for another 3-4 minutes until fully cooked.
