Pineapple BBQ Baked Chicken Foil Packets

  1. Preheat your oven to 400°F (200°C).
  2. Prepare four large sheets of aluminum foil, approximately 12 x 18 inches each.
  3. In a small bowl, mix together the olive oil, garlic powder, salt, and pepper. Rub this mixture over each chicken breast.
  4. Place one seasoned chicken breast in the center of each foil sheet. Top each breast with ¼ cup of pineapple chunks and ¼ cup of BBQ sauce. Drizzle a little extra BBQ sauce on top.
  5. Fold the sides of the foil over the chicken and pineapple, then seal tightly at the top.
  6. Place the foil packets on a baking sheet and bake in the preheated oven for 25 to 30 minutes.
  7. Carefully open one of the packets to check the chicken; it should be tender and juicy. If it needs more time, reseal and return it to the oven for an additional 5-10 minutes.
  8. Once cooked, remove the packets from the oven and let them sit for a few minutes before opening. Serve with your choice of sides.
