Quick Gherkins are a delightful and easy approach to preserving pickling cucumbers, creating a crunchy, tangy snack that’s perfect for any occasion.

1 pound pickling cucumbers (small varieties work best)
1 cup filtered water
1 cup white vinegar
½ cup granulated sugar
2 tablespoons pickling or kosher salt
2 cloves garlic, smashed
2 tablespoons fresh dill
1 teaspoon mustard seeds
½ teaspoon black peppercorns
½ teaspoon red pepper flakes (optional)
Instructions
Rinse the pickling cucumbers under cold water and slice them into spears, rounds, or leave them whole, depending on your preference.
In a medium saucepan, combine the water, white vinegar, granulated sugar, and salt. Heat over medium heat, stirring until the sugar and salt dissolve completely. Bring the mixture to a boil, then remove from heat.
To the hot brine, add the smashed garlic cloves, dill, mustard seeds, black peppercorns, and red pepper flakes (if using). Let the brine cool for about 15 minutes.
In a clean, sterilized jar or container, tightly pack the sliced cucumbers. Pour the cooled brine over the cucumbers, ensuring they are fully submerged.
Seal the jar tightly and place it in the refrigerator. Allow the quick gherkins to marinate for at least 2 hours before consuming.
