1 pound breakfast sausage (pork or turkey), removed from casings
4 large eggs
1 tablespoon butter

Instructions
Start by preparing the potatoes: Dice the russet potatoes into small, uniform pieces, approximately ½-inch cubes. Rinse the diced potatoes in cold water to remove excess starch, then pat them dry with a clean towel.
Heat the olive oil in a large skillet over medium heat. Once hot, add the diced potatoes, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir to coat the potatoes evenly.
