2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
3/4 cup milk
1/4 cup olive oil
6 large eggs
1 cup shredded cheese (cheddar, mozzarella, or a blend)
1/2 cup cooked and crumbled sausage or bacon
1/2 cup diced bell peppers
1/2 cup diced onions
Salt and pepper, to taste
Fresh herbs (basil, chives, or parsley) for garnish
Instructions
Preheat your oven to 425°F (220°C).
In a mixing bowl, combine the flour, baking powder, and salt. Mix well until there are no lumps remaining.
Pour in the milk and olive oil. Stir until a soft dough forms.
On a floured surface, roll the dough into a rectangle that fits your sheet pan (approximately 12x18 inches). Transfer it to a greased sheet pan.
Place the crust in the preheated oven and bake for about 10 minutes or until lightly golden.
In a bowl, whisk together the eggs, adding salt and pepper to taste.
Remove the crust from the oven. Evenly distribute the cheese, followed by the sausage or bacon, and vegetables. Pour the egg mixture over the top.
Return the sheet pan to the oven and bake for an additional 15-20 minutes, or until the eggs are set and the top is golden brown.
