  1. In a skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat and transfer to the slow cooker.
  2. Add the diced onion and minced garlic to the skillet. Sauté until the onions are translucent, approximately 3-4 minutes. Transfer this mixture to the slow cooker with the beef.
  3. Pour in the crushed tomatoes and beef broth. Stir in the Italian herbs, salt, and pepper. Mix well to combine.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, stir in the broken lasagna noodles. Cover and continue cooking until the pasta is tender.
  6. In a small bowl, combine the ricotta cheese, Parmesan cheese, egg, and parsley (if using). Mix well.
