2 tablespoons granulated sugar
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 ripe banana, mashed
1 large egg
¾ cup milk (or almond milk)
2 tablespoons melted butter (or coconut oil)
1 teaspoon vanilla extract
Fresh berries (such as blueberries, strawberries, or raspberries)
Maple syrup or honey
Powdered sugar (optional)
Instructions
In a large mixing bowl, combine all the dry ingredients: flour, sugar, baking powder, baking soda, and salt. Whisk them together until evenly mixed to avoid clumps of baking powder.
In another bowl, mash the ripe banana until smooth. Add the egg, milk, melted butter, and vanilla extract. Whisk until the mixture is well combined and smooth.
Pour the wet ingredients into the dry ingredients. Gently mix with a spatula until just combined, aiming for a thick batter with some small visible lumps.
Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to coat the surface.
Once hot, pour small amounts of batter onto the skillet, forming mini pancakes (about 3 inches in diameter).
Cook for about 2-3 minutes or until bubbles form on the surface. Flip the pancakes and cook for another 1-2 minutes until golden brown.
Remove from the skillet and keep warm in a low oven (around 200°F) while you cook the remaining pancakes.
