Ingredients
Scale:
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup rolled oats
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
1 cup chocolate chips
1 cup chopped nuts (pecans or walnuts)
1 cup shredded coconut (optional)
Instructions
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a mixing bowl, whisk together the flour, baking soda, salt, and oats. Set aside.
In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3-4 minutes.
Add the eggs one at a time, beating well after each addition. Then mix in the vanilla extract.
Gradually incorporate the dry ingredient mixture into the wet ingredients, mixing until just combined.
Fold in the chocolate chips, nuts, and shredded coconut if using.
Drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between each cookie.
Bake in the preheated oven for 10-12 minutes or until the edges are golden brown and the centers appear slightly underbaked.
Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
