Wonton soup with shrimp is a beautiful and comforting dish that perfectly showcases the delicate flavors of Asian cuisine. This beloved soup, a staple in many Chinese households, is not just a meal; it’s an experience that warms the soul.
Ingredients
Scale:
1 cup raw shrimp, peeled and deveined
2 green onions, finely chopped
1 tablespoon fresh ginger, minced
1 tablespoon soy sauce
1 teaspoon sesame oil
1 package wonton wrappers (about 30 pieces)
6 cups chicken or vegetable broth
2 cloves garlic, minced
1 inch piece of ginger, sliced
2 tablespoons soy sauce
1 tablespoon rice vinegar
Salt and pepper to taste
Fresh cilantro leaves for garnish
Additional chopped green onions for garnish
Chili oil or sesame seeds (optional) for garnish
Instructions
Start by making the filling for the wontons. In a food processor, combine the raw shrimp, green onions, ginger, soy sauce, and sesame oil. Pulse until the mixture is finely chopped but not pureed.
Take a wonton wrapper and place about a teaspoon of the shrimp filling in the center. Moisten the edges with a little water, fold the wrapper in half to form a triangle, then pinch to seal tightly.
In a large pot, bring the chicken or vegetable broth to a simmer over medium heat. Add the minced garlic, sliced ginger, soy sauce, and rice vinegar. Allow the broth to simmer for about 10 minutes.
Once the broth is ready, gently add the wontons and cook for 5-7 minutes or until they float to the surface.
Season the broth with salt and pepper to taste, and remove the ginger slices before serving.
Serve the wonton soup in bowls, garnished with fresh cilantro, chopped green onions, and a drizzle of chili oil or sesame seeds, if desired.
