200g feta cheese
2 tablespoons olive oil
1 teaspoon dried oregano (or fresh, if available)
Salt and pepper to taste
1 cup cherry tomatoes, halved
4 large eggs
Fresh herbs for garnish (such as basil or parsley)
Instructions
Preheat your oven to 400°F (200°C).
In a baking dish, place the feta cheese in the center. Drizzle with olive oil and sprinkle with dried oregano, salt, and pepper.
Add the halved cherry tomatoes around the feta.
Bake in the preheated oven for 20-25 minutes, or until the feta is soft and slightly golden, and the tomatoes have burst.
Remove the baking dish from the oven. Using a spoon, create small wells in the feta and tomato mixture.
Crack an egg into each well, being careful not to break the yolks.
Return the dish to the oven and bake for an additional 10-12 minutes, or until the egg whites are set but the yolks remain runny.
Remove from the oven and garnish with fresh herbs before serving.
