Ingredients
Scale:
1 cup of graham cracker crumbs
1/4 cup of unsweetened cocoa powder
1/2 cup of unsalted butter, melted
1/4 cup of granulated sugar
4 cups of your favorite ice cream (vanilla, chocolate, or a combination)
1 cup of chocolate fudge sauce, plus more for drizzling
2 cups of heavy whipping cream
1/4 cup of powdered sugar
1 teaspoon of vanilla extract
1/2 cup of chopped nuts (optional)
1/2 cup of mini chocolate chips
Instructions
In a medium bowl, mix together the graham cracker crumbs, cocoa powder, melted butter, and granulated sugar until well combined. The mixture should resemble wet sand.
Press the mixture into the bottom of a 9-inch springform pan evenly and refrigerate the crust for 30 minutes to set.
Remove the crust from the refrigerator and scoop half of the ice cream into the pan. Spread it evenly over the crust and drizzle half of the chocolate fudge sauce on top.
Return the cake to the freezer for about 2 hours or until the ice cream is firm.
Once the first layer is firm, add the remaining ice cream over the fudge sauce and smooth it out. Drizzle with the remaining chocolate fudge sauce.
Freeze the cake for another 2 hours until completely set.
In a large bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
Once the cake is frozen, remove it from the springform pan and spread the whipped cream evenly over the top and sides of the cake.
Sprinkle the chopped nuts and mini chocolate chips over the whipped cream. Drizzle with additional chocolate fudge sauce.
Slice and serve immediately. Store any leftovers in the freezer for up to a week.
