1 cup long-grain white rice
2 cups chicken broth or water
2 tablespoons Cajun seasoning blend
2 tablespoons olive oil
1 pound ground beef or ground pork
1 small onion, diced
1 bell pepper, diced
2 cloves garlic, minced
1 cup chicken livers (optional)
Chopped green onions for garnish
Hot sauce, to taste (optional)
Instructions
Heat the olive oil in a large skillet or Dutch oven over medium heat until shimmering.
Add the diced onion and bell pepper, sauté until softened, about 5 minutes.
Stir in the minced garlic and cook for an additional 1 minute until fragrant.
Add the ground meat to the skillet, breaking it up with a spatula. Cook until browned, approximately 6-8 minutes.
If using chicken livers, add them now and cook until they are no longer pink, about 5 minutes.
Sprinkle in the Cajun seasoning blend and stir well to combine.
Rinse the rice under cold water, then add it to the skillet, mixing well.
Pour in the chicken broth, stir, and bring the mixture to a boil.
Reduce the heat to low, cover, and simmer for about 20 minutes.
