Instructions
Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan, lining it with parchment paper for easy removal.
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt until well combined.
In another bowl, beat the vegetable oil and eggs together until thoroughly mixed. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
Fold in the grated carrots and walnuts (if using) until evenly distributed throughout the batter.
Pour the batter into the prepared baking pan, smoothing the top with a spatula.
Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
