Ingredients
Scale:
12 oz penne pasta
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, diced
2 teaspoons fajita seasoning
1 red bell pepper, sliced
1 green bell pepper, sliced
1 small onion, sliced
1 cup heavy cream
1 cup chicken broth
1 cup shredded cheddar cheese
1 tablespoon lime juice
Salt and pepper to taste
Chopped fresh cilantro for garnishing
Lime wedges for serving
Instructions
In a large pot, bring salted water to a boil and cook the penne pasta according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
In the same pot, heat the olive oil over medium heat. Add the diced chicken and sprinkle with fajita seasoning. Sauté for about 5-7 minutes until the chicken is cooked through and golden brown.
Add the sliced bell peppers and onions to the pot. Sauté for an additional 3-4 minutes until the vegetables are tender.
Pour in the heavy cream and chicken broth, stirring well. Let the mixture simmer for about 2-3 minutes until slightly thickened.
Stir in the cheddar cheese until melted and smooth. Add the lime juice, and season with salt and pepper to taste.
Return the cooked pasta to the pot and toss everything together until the pasta is well coated in the creamy sauce.
Serve immediately, garnishing with chopped cilantro and lime wedges.
