Instructions

  1. In a large mixing bowl, whisk together the heavy cream, sweetened condensed milk, creamy peanut butter, vanilla extract, and salt until well combined and smooth.
  2. Pour the peanut butter mixture into popsicle molds, filling each mold nearly to the top.
  3. Insert sticks into the molds and freeze for at least 6 hours or until solid.
  4. Prepare the chocolate coating by combining the semi-sweet chocolate chips and coconut oil in a microwave-safe bowl and heating until melted and smooth.
  5. Remove the ice cream pops from the molds. If they are difficult to remove, run warm water over the outside of the molds.
  6. Dip each ice cream pop into the melted chocolate, allowing any excess to drip off.
  7. Place the coated pops on a baking sheet lined with parchment paper and return them to the freezer for another 30 minutes to set the chocolate coating.
  8. Once the chocolate has hardened, your Chocolate Coated Peanut Butter Ice Cream Pops are ready to enjoy!
