Instructions

  1. Begin by cooking the chicken breast until it reaches an internal temperature of 165°F (75°C). This can be done by grilling, baking, or pan-searing. Once cooked, allow it to cool and then dice or shred it into bite-sized pieces.
  2. Place the eggs in a saucepan and cover them with cold water. Bring to a boil, then reduce the heat and let them simmer for about 9-12 minutes. Once done, transfer them to an ice bath to cool before peeling and quartering.
  3. Rinse the romaine and mixed greens thoroughly under cold water. Pat them dry and chop them into bite-sized pieces and place them in a large salad bowl.
  4. To the greens, add diced avocado, halved cherry tomatoes, diced cucumber, and thinly sliced red onion.
  5. Distribute the cooked chicken and hard-boiled egg quarters over the top of the salad.
  6. Sprinkle the crumbled blue cheese evenly across the salad.
  7. Drizzle the blue cheese dressing over the entire salad.
  8. Finally, sprinkle with fresh chives or parsley if desired. Serve immediately, or refrigerate for up to 30 minutes to allow the flavors to meld.
