- 1 cup shredded carrots
- 1 cup red cabbage, thinly sliced
- 1/2 cup chopped green onions
- 1/4 cup sesame dressing
- 8 ounces pasta (e.g., rotini or penne)
- 1 cup cherry tomatoes, halved
- 1/2 cup olives, sliced
- 1/4 cup feta cheese, crumbled
- 3 tablespoons balsamic vinaigrette
- 2 cups shredded cooked chicken
- 1 cup cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup ranch dressing
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh chives
Instructions
- In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper until well combined. Let marinate for at least 30 minutes.
- Preheat the grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side until fully cooked.
- For the Asian Chicken Salad, mix shredded grilled chicken with salad greens, carrots, red cabbage, green onions, and sesame dressing.
- For Cold Chicken Pasta, toss cooked pasta with diced grilled chicken, cherry tomatoes, olives, feta cheese, and balsamic vinaigrette.
