A delightful way to celebrate fall, combining the rich, earthy taste of pumpkin with aromatic spices that evoke comfort and nostalgia. These baked fritters provide a healthier twist compared to their fried counterparts.
Ingredients
Scale:
1 cup all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
1 cup canned pumpkin puree
2 large eggs
1/4 cup milk
1/4 cup brown sugar (optional)
Maple syrup (optional for drizzling)
Yogurt or sour cream (optional for dipping)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
In a separate bowl, mix the wet ingredients: pumpkin puree, eggs, milk, and brown sugar (if using). Stir until smooth.
Gradually pour the wet mixture into the dry ingredients. Fold until just combined.
Drop spoonfuls of the batter onto the prepared baking sheet, leaving space between each fritter.
Bake for 20-25 minutes, or until golden brown and a toothpick comes out clean.
