8 oz (225 g) dark chocolate (at least 60% cocoa, chopped)
3 tablespoons unsalted butter
3 large eggs (or substitute with 1/2 cup silken tofu for an egg-free version)
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract (for whipped cream)
Chocolate shavings or curls (for garnish)
Fresh berries (like raspberries or strawberries, for garnish)
Mint leaves (for garnish)
Instructions
In a heatproof bowl, combine the chopped dark chocolate and butter. Place the bowl over a pot of simmering water (double boiler method) and stir occasionally until completely melted and smooth. Be cautious not to let any water get into the bowl, as this can cause the chocolate to seize. Remove from heat and let it cool slightly.
In a separate bowl, whisk the eggs and granulated sugar together until pale and fluffy, about 3-5 minutes.
Gently fold the melted chocolate mixture into the egg mixture until just combined.
In another bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
Carefully fold the whipped cream into the chocolate mixture in three additions.
Once combined, spoon the mousse into individual serving dishes or a large bowl. Cover and refrigerate for at least 2 hours, or until set.
