1 medium ripe avocado, diced into bite-sized pieces
1 medium red bell pepper, diced
1/2 small red onion, finely chopped
1 jalapeño, seeded and minced (optional)
1/4 cup fresh cilantro, chopped
Juice of 2 limes
2 tablespoons olive oil
Salt and pepper to taste
Instructions
Begin by preparing your corn. If using fresh corn, husk the ears and remove the kernels with a sharp knife. If using canned corn, ensure it is well-drained.
In a large mixing bowl, combine the fresh corn, diced avocado, red bell pepper, red onion, jalapeño (if using), and chopped cilantro. Gently toss to mix the ingredients without mashing the avocado.
In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper until well combined.
Pour the dressing over the corn and avocado mixture. Stir gently until everything is evenly coated.
