Salt and pepper, to taste
1/2 cup soy sauce
1/4 cup honey or maple syrup
1 tablespoon rice vinegar
1 tablespoon cornstarch mixed with 2 tablespoons water

1 teaspoon freshly grated ginger
1 tablespoon sesame oil
Instructions
Preheat the oven: Set your oven to 425°F (220°C).
Prepare the chicken: Pat the chicken thighs dry with a paper towel and season with salt and pepper.
Make the teriyaki sauce: In a medium saucepan, combine soy sauce, honey (or maple syrup), rice vinegar, minced garlic, grated ginger, and sesame oil. Heat over medium heat until simmering.
Thicken the sauce: Add the cornstarch slurry to the saucepan and stir until the sauce thickens.
Arrange the chicken: Place the seasoned chicken thighs in a baking dish, skin-side up, and pour half of the teriyaki sauce over the chicken.
Bake the chicken: Bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
Glaze the chicken: Brush the remaining teriyaki sauce over the chicken during the last 5 minutes of baking.
Rest and serve: Let the chicken rest for 5 minutes before serving.
