1 can (15 oz) chickpeas, drained and rinsed
1/4 cup tahini sauce
1/2 teaspoon ground cumin
Salt, to taste
1/4 cup lemon juice (about 2 lemons)
1/4 cup olive oil
1-2 cloves garlic, minced
1 cup roasted red peppers, chopped
Instructions
In a food processor, combine the rinsed chickpeas, tahini, lemon juice, minced garlic, and ground cumin. Process until smooth, scraping down the sides as necessary.
With the processor running, slowly drizzle in the olive oil until fully incorporated and creamy. Adjust texture by adding water or more olive oil if needed.
Add the roasted red peppers and salt to taste, then blend again until the peppers are evenly mixed and the hummus is a vibrant red color.
Once blended to your desired consistency, taste and adjust seasonings, adding more lemon juice or salt as needed.
