This no-bake treat combines rich mascarpone cheese with fresh berries, creating a refreshing and visually stunning dessert that perfectly captures the essence of patriotic celebrations.
Ingredients

2 cups of strong brewed espresso or coffee, cooled to room temperature
1 cup of mascarpone cheese, preferably at room temperature
1 cup of heavy whipping cream, chilled
½ cup of sugar, granulated or superfine
1 tsp of vanilla extract, pure vanilla
1 package of ladyfinger cookies (about 24-30 pieces)
1 cup of fresh strawberries, hulled and sliced
1 cup of fresh blueberries, rinsed and dried
Additional fresh berries for garnish
Mint leaves (optional) for garnish
Instructions
Start by brewing 2 cups of strong espresso or coffee. Allow it to cool completely.
In a large mixing bowl, whisk together the mascarpone cheese, heavy whipping cream, sugar, and vanilla extract until smooth and creamy.
Dip each ladyfinger into the espresso for about 2 seconds.
In a 9x13 inch baking dish, layer half of the soaked ladyfingers at the bottom.
Spoon half of the mascarpone mixture over the ladyfingers, spreading it evenly.
Add a layer of fresh strawberries and blueberries on top.
Repeat the layers with the remaining ladyfingers and mascarpone mixture.
Cover the baking dish with plastic wrap and refrigerate for at least 4 hours.
Garnish with additional fresh berries and mint leaves before serving.
