  1. Start by brewing 2 cups of strong espresso or coffee. Allow it to cool completely.
  2. In a large mixing bowl, whisk together the mascarpone cheese, heavy whipping cream, sugar, and vanilla extract until smooth and creamy.
  3. Dip each ladyfinger into the espresso for about 2 seconds.
  4. In a 9x13 inch baking dish, layer half of the soaked ladyfingers at the bottom.
  5. Spoon half of the mascarpone mixture over the ladyfingers, spreading it evenly.
  6. Add a layer of fresh strawberries and blueberries on top.
  7. Repeat the layers with the remaining ladyfingers and mascarpone mixture.
  8. Cover the baking dish with plastic wrap and refrigerate for at least 4 hours.
  9. Garnish with additional fresh berries and mint leaves before serving.
