  1. In a large skillet, melt the butter over medium heat until it begins to bubble.
  2. Add the brown sugar and cinnamon, stirring constantly until the mixture is combined and begins to bubble.
  3. Carefully place the sliced bananas cut-side down into the skillet. Cook for about 2-3 minutes, or until they start to caramelize.
  4. Gently flip the bananas to caramelize the other side for another 2-3 minutes.
  5. Remove the skillet from heat. Add the dark rum and vanilla extract carefully; it may flame up, so stand back.
  6. Cook for an additional minute until the alcohol cooks off and the sauce thickens slightly.
  7. Serve the warm bananas foster immediately over scoops of vanilla ice cream, drizzling the caramel sauce on top.
