1 package (10 ounces) of instant vanilla pudding mix
2 cups cold milk
1 cup heavy whipping cream
1 teaspoon vanilla extract
1 cup powdered sugar
2 cups fresh strawberries, hulled and sliced
Additional fresh strawberries, preferably sliced for garnish
Whipped cream (for serving)
Instructions
In a large mixing bowl, whisk together the instant vanilla pudding mix and cold milk for about 2 minutes until it thickens to a creamy consistency.
In another bowl, whip the heavy cream with a hand mixer on medium speed until soft peaks form, which should take about 3-4 minutes. Gradually add the powdered sugar and vanilla extract, then continue to beat until stiff peaks form.
Gently fold the whipped cream into the pudding mixture until fully combined, using a spatula to ensure you maintain the fluffiness.
Add the sliced fresh strawberries to the fluffy mixture and gently fold them in.
Transfer the strawberry shortcake fluff to a large serving bowl or individual cups.
Chill in the refrigerator for at least 1 hour before serving.
Before serving, top with additional fresh strawberries and a dollop of whipped cream.
