In a skillet over medium heat, melt 3 tablespoons of unsalted butter. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the shrimp to the skillet and cook for 2-3 minutes, or until they turn pink and are cooked through. Remove from heat and allow to cool slightly.
In a mixing bowl, combine the cooked shrimp, softened cream cheese, grated Parmesan cheese, chopped parsley, lemon juice, paprika, salt, and pepper. Stir until well blended.
Using a sharp knife, make an incision in the side of each salmon fillet to create a pocket for the filling.
Stuff each salmon fillet generously with the garlic butter shrimp filling. Seal the opening with toothpicks if necessary.
Place the st■ fillets on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper.
Bake the salmon in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork.
Serve immediately, garnished with additional chopped parsley if desired.
