Instructions
Grate the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.
In a medium bowl, combine the almond flour, baking powder, salt, and black pepper. Whisk until well mixed and free from lumps.
In a separate large bowl, beat the eggs until frothy. Add the grated zucchini, Parmesan cheese, minced garlic, and parsley. Mix until fully incorporated.
