12 oz (340 g) penne or fusilli pasta
1 cup cherry tomatoes, halved
1 medium zucchini, diced
1 cup baby spinach
1 red bell pepper, diced
½ cup black olives, sliced
2 cups cooked chicken, cubed (or substitute with chickpeas)
4 cups low-sodium vegetable or chicken broth
2 tbsp olive oil
1 tsp lemon juice
4 cloves garlic, minced
1 tsp dried oregano
½ tsp red pepper flakes (optional)
Salt and pepper to taste
½ cup feta cheese, crumbled
Fresh basil, for garnish
Instructions
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant. Be careful not to let the garlic brown.
Add the cherry tomatoes, zucchini, red bell pepper, and olives to the pot. Sauté the vegetables for approximately 5 minutes.
